Animal-free egg protein via fermentation

About

Onego Bio is a US-Finnish food ingredient company that produces Bioalbumen, a non-animal egg protein made through precision fermentation. The product is ovalbumin, the main protein in egg white, produced by the filamentous fungus Trichoderma reesei. The company states that Bioalbumen has an amino acid sequence identical to the natural protein and offers full functionality for food manufacturers, along with price and supply stability relative to conventional eggs. Reported environmental comparisons versus traditional eggs include roughly 90% less land use, 72% fewer greenhouse gas emissions and 89% less water use.

The technology originated at VTT Technical Research Centre of Finland, where co-founder Chris Landowski worked on programming T. reesei to produce egg protein. Onego Bio was spun out of VTT in 2022 and is led by CEO Maija Itkonen, a serial founder and industrial designer. The company is headquartered in Helsinki with a commercial office in San Diego, California, and a planned flagship manufacturing facility in Jefferson County, Wisconsin, which was selected in March 2025 and is expected to begin operations around 2028. The company has said it is producing Bioalbumen with co-manufacturers while its own plant is built.

In December 2024 Onego Bio submitted a GRAS notification to the US Food and Drug Administration, and in September 2025 the FDA issued a no questions letter on the product's GRAS status. The company works with food manufacturers on product formulation across baked goods, confectionery, snacks, sauces, pasta and meat alternatives, and has reported collaborations with more than 25 consumer packaged goods companies. Commercial agreements announced include a 2026 collaboration with Sigma Foods to evaluate Bioalbumen and a September 2026 supply agreement with Zen Waffles. Onego Bio has also received a $2 million Department of Defense award under the Distributed Bioindustrial Manufacturing Program and is a founding member of the Precision Fermentation Alliance. The company has been involved in patent litigation with The EVERY Company over ovalbumin production via precision fermentation, a case that was dismissed in Delaware in October 2026.
